I make this super easy chicken pie for Florence and Jimmy and they both really like it! (As long as I don’t burn the onion and get black bits in it!)

They’re both really fussy but this is always a hit and I’m pleased because it has all the food groups in one dish, I can make loads, freeze it and then only have one thing to contend with heating up for them! It’s also a really good weaning recipe and you can tailor the size of the chunks according to your little ones age.

Ruth’s Chicken Pie!

Ingredients

One large carrot peeled and finely chopped.

One small onion peeled and finely chopped.

One large chicken breast cut into very small pieces.

A small pot of cream.

Half a pint of full fat milk.

a teaspoon of English mustard.

A handful of green beans chopped into small pieces.

A couple of medium sized potatoes peeled and finely chopped.

2 knobs of butter.

A teaspoon of extra virgin olive oil.

A teaspoon of plain flour.

A handful of mature cheddar cheese

Method

Boil the potatoes until tender while you fry the carrots, onions and beans in a small frying pan with the oil.

Add the small chunks of chicken to a pan of milk and bring to the boil before simmering for a few minutes to poach the chicken.

Mash the potatoes with a knob of butter and set aside. Spread the carrots, beans and onions mixture on the bottom of a small Pirex dish.

Add the poached chicken to the Pirex and spread evenly over the dish. Do not discard the milk but take it off the heat. (You could always blitz the carrots, beans, onions and chicken with a blender before spreading in the dish and then it would make it easy for little ones to try).

Make a roux by melting the other knob of butter and adding in the flour to form a paste. Slowly add the milk you poached the chicken in while stirring all the time. After a few minutes you will have a thick creamy bechamel sauce. Add to this the handful of cheese and teaspoon of English mustard and pour over the chicken, carrots, beans and onions.

Top with the mashed potato and bake in the oven for half an hour or freeze for another day.

There’s not masses of ingredients meaning the cost is low but this recipe gives me four portions!
