Jimmy’s been really under the weather this weekend and I knew when we got home from my Mum’s this afternoon that we’d be staying in as he’s still not himself enough to go out. This of course makes Florence very bored so to give her something crafty, fun and with a yummy end result my Mum whipped her up some easy fairy cakes to bring home and decorate.
My Mum says you just need to remember 4/4/4/2! 4oz of caster sugar, 4oz of self raising flour, 4oz of unsalted butter and 2 medium eggs. Whip them up till fluffy and spoon the mixture into cases before baking at gas mark 5 for 12 minutes.
When we got home I then mixed a tub of cream cheese with some icing sugar, I did it by taste until it was sweet and then added a drop of red food coloring for Florence to then mix in. I left her to it with a few pots of different sweets and some smarties which I’d used an icing pen to draw dots in the middle of so that she could have eyes. She spent a good hour having fun on her own in the kitchen and the results are fab! For such an easy recipe with both the cakes and the icing it’s a pretty hassle free and cheap activity!
