I’m out tomorrow night so we’ve had an early pancake day today instead!
I make my pancake mixture by mixing the exact same volumes of egg, plain flour and full fat milk then adding a pinch of salt and I always fry them in butter because they just don’t taste the same otherwise!
Today I did baked spinach and ricotta pancakes by mixing a tub of ricotta cheese with a bag of wilted spinach and grating a whole nutmeg into the mixture. I prepared the pancakes then rolled them with the mixture inside before baking at 200 for 20 minutes with a generous handful of mature cheddar cheese on top!

Of course it wouldn’t have been right to have pancakes without saving some batter for a Nutella one afterwards!
