Smug Mug Pot Noodle – Recipe!
I’ve got a bit of a smug mug with my new noodle recipes and I just had to share them so that your mug can get as smug as mine! For a healthy but filling lunch I found myself buying rather expensive healthy versions of a pot noodle, you know the ones… Itsu do a range amongst others but actually… They were racking up a bit more of a bill than I’d like when I worked out that I could totally make them myself to have either at home or indeed when I’m out. Layer up a Kilner jar with the ingredients, do the pot up and take it with you so that when you fancy your non calorific lunch you can just boil a kettle and go!
This is my Indian veggie ramen bowl, or veggie smug mug if you will!
Ingredients:
A thumb sized piece of fresh ginger (peeled and grated), one garlic clove (peeled and grated), one medium sized carrot (spiralised), one veggie stock cube, one tbsp of mild curry powder, a teaspoon of Indian chutney, 2 tbsp of canned sweetcorn, two small spring onions (finely chopped), a nest of quick cook dried vermicelli rice noodle (mine are Sainbury’s own brand) and a tablespoon of frozen garden peas.
Method:
In the bottom of a Kilner jar add the stock cube, curry powder, garlic and ginger then top with layers of veggies – first the carrot, followed by the sweetcorn and peas and top them with the noodle nest. Sprinkle the spring onions on top and shut the lid until you are ready to cook! You can carry it with you out of the house for a picnic or work lunch or just leave in the fridge until you are ready.
Ready to Eat!
Pour boiling water until nearly at the top of the jar, close the lid and wait 5 minutes. When you open the lid add the teaspoon of chutney, stir and you’re good to go! YUM!
You can make loads of variations of this and I think it’s probably the healthiest pot noodle you will find!
