A Valentine’s And Pancake Day All Rolled Into One!

This year Shrove Tuesday, or what we in this house more commonly call Pancake Day, falls on Tuesday the 17th February just a few days after Valentines. I decided then that it might be an idea to kill two birds with one stone and see if I could make a Valentine’s pancake so I’ve been having a bit of a practice.

To make thick pancakes of the Scotch variety I mix the same ingredients in the same quantities that I do for Yorkshire puddings which is equal volumes of egg, full fat milk and plain flour with a pinch of salt. I whisk until there are no lumps and then fry using butter and never oil! For this heart shaped version I put the batter into a piping bag and first piped the shape then when that cooked a little I filled in the middle and flipped when just turning brown on the bottom. I cooked on the other side for a minute and this was the result!

It's not perfect but using a piping bag makes it easier to get the shape you want for the outline than doing it freehand and if I practice I think I could do something a little more impressive!

I wanted to top it with strawberries cut into a fan with icing sugar but my husband ate all of them before I had a chance so I served it up instead with some Ben and Jerry’s, sliced banana and a dusting of icing sugar on top. The children were very impressed!

I think for Valentine's day I will use red berries or at the very least some strawberry ice cream but this chocolate version went down rather quickly so I think it was enjoyed!
