A few week’s ago Sainsbury’s sent me a bulb of the new black garlic they are selling. It costs £1.50 per bulb and is completely different in flavour to white garlic despite the fact it is one and the same only with a gently aged process. They say that the soft jelly-like cloves add molasses and balsamic flavours to anything you cook and I wondered how they would come out with a pizza bread?
I often do caramelised red onion, garlic and mozzarella pizzas so I thought I would make it in a similar way but instead of leaving the pizza flat, I’d roll it up. This makes it a little bit like a calzone with the oozing filling wrapped up inside like a parcel but also, as a roll it makes something quite pretty to slice and have cold in a picnic.
The black garlic was very different to use as it doesn’t need pressing like white garlic, it’s already like a paste and can just be smooshed down with the back of a spoon. When cooking with the other ingredients it blended and melted with the butter and was very easy to use in this respect. The taste was extremely different and gave the pizza bread a whole new flavour quite unlike anything I’ve made before. It’s definitely worth trying with recipes you would usually use white garlic for and seeing the difference it makes!

Ingredients:
3 cloves of black garlic
One large red onion sliced
100g of slated butter
1 tbps of caster sugar
Pizza dough (I make mine in the bread machine).
Method:
Fry the onions in the butter until starting to get soft then add the black garlic in whole cloves. Break the garlic into the butter and onions with the back of a spoon and when the onions are browning add in the sugar.Fry for a further minute or so until the sugar has completely melted and pour the mixture over a recently rolled thin pizza dough spreading around the middle but leaving 2 inches around the edges. Break the mozzarella over the mixture and then fold up as you would a tortilla (ends in first and then roll so that everything is sealed. Tip: Dab a bit of water on any edges that won’t stick down and this will glue them together.
When the pizza is rolled you will need to bake it in the oven at about 180 for 20 minutes or until the dough is browned a little. Remove from the oven to either eat immediately whilst warm or save and cut into slices when cold.
My mouth is watering! This looks really tasty and warming for the Autumn! I would serve it along with a crispy side salad and maybe some french fries!
