Cajun Prawn Courgetti Under 500 Calories!


This was inspired by a dish in our @simplycookcom box which I have recently tried for £3 and liked very much but am not sure I’d want to part with £9 for. You get some great ideas if you struggle choosing what to make ending up with the same dishes over and over and the herbs and spices they deliver to go with the fresh ingredients and store cupboard fodder you already have are fab, I liked it and if money was no object I’d order regularly but at the moment I just can’t justify it. I have really liked the recipes however, especially the Cuban Prawn Pasta which was a #LowCalorieRecipe anyway but I have made even lower introducing courgetti instead of pasta. I couldn’t recreate their particular Cuban spices so have made mine Cajun and it is every bit as delicious – with a couple of slices of garlic bread (if you fancy) it still comes in at #Under500cals or if you’d like to add more fibre then a great addition instead of the courgette is to serve it with Organic Psyllium Husk – BONZA!

INGREDIENTS (per person): 1 medium courgette (spiralised and seasoned), 75g of cherry tomatoes (cut in half), 50g of broccoli (cut into small florets), 25ml of single cream, a teasooon of Cajun spices, half a glass of white wine, a teaspoon of garlic paste, a teaspoon of olive oil, 100ml of water.

METHOD: Heat the oil in a heavy saucepan and add the prawns for 2 minutes stirring to cook all over. Add the Cajun spices and toss in the pan for 30 seconds before transferring to a plate for later. Heat the tomatoes, broccoli and garlic paste in the same pan and cook for 2 minutes before adding the wine and reducing it down over the next 5 minutes. Reduce the heat and add the cream while stirring gently for a few minutes until it thickens then re add the prawns and water. Heat your courgetti in the microwave for 30 seconds and top with your prawns and sauce.

This is super tasty and very filling – Jonny had the same with pasta but actually I’d rather get my carb hit in a couple of slices of garlic bread which I would have to forgo if I wanted it with the pasta like him – if you would prefer the pasta you can still get a portion for under 500 calories if you use 75g of tagliatelle!
