I’m trying to eat more healthily at the moment and get a bit trimmer for summer so I am eating lighter and using more fresh ingredients with my summer recipe ideas.
Britmums and Morrisons asking for summer recipes couldn’t have come at a better time then as I have been creating lots and this one, that I made last night, is one of my favourites!
I created courgetti (healthier than spaghetti) with home made pesto, mushrooms, onions and tomoatoes and am entering my recipe into the competition to have my recipe included in a Morrisons recipe e-book. Courgetti With Home Made Pesto, Mushrooms, Onions And Tomatoes!

Mine fits perfectly in with the ‘Light Summer Family Meals’ category as we all enjoyed it and it’s a very inexpensive meal to boot! So, this is my ‘Light Summer Family Meal’ of Courgetti With Home Made Pesto, Mushrooms, Onions And Tomatoes!
Ingredients:
2 large courgettes, shredded using the cheese grater blade on a mandolin to resemble spaghetti
A handful of pine nuts, toasted
A good glug of Morrisons olive oil
A handful of grated Parmesan Cheese
3 cloves of garlic, finely chopped
1 red onion, chopped
A handful of Morrisons Button Mushrooms, cut in half
A Handful of fresh Basil
Salt
Cherry tomatoes, chopped in half
Method:
For the pesto blend the basil, half the garlic, the pine nuts, parmesan chees and the glug of olive oil (add enough until it is the consistency of yogurt) with a hand blender and set aside.
Pesto!
Fry the mushrooms, onions and the rest of the garlic until soft and tender then add the pesto to it and warm through.
Put the courgette (grated courgette) in a pan of salted cold water and bring to the boil for two minutes.
Courgetti!
Add the cooked courgette to the pesto and vegetable and mix before serving with some cherry tomatoes!
