Cute Easter Biscuits!

We wanted to make something to eat for Easter time treats but needed the recipe to be simple and the method easy. I’m not a fantastic cook and although I often have desires to whip up something amazing it very rarely comes off so I like to stick to things which don’t require a great deal of skill.

These Easter biscuits are perfect because they’re quick (apart from the chilling time) and super simple – even I’ve managed it so that proves it. This is an old recipe of my Mum’s and although not terribly healthy, the dough is really great for little ones to use as it;s thick and easily moulded like play dough – a little sweet treat to have occasionally!

I found some great cutters to use with bunny’s an egg and a chick from 99p Land, what a bargain and I’m going to use them for some other Easter foodie treats too.

These biscuits are great to eat on their own or are fab decorated with melted chocolate and sprinkles!

INGREDIENTS

225 g Butter

170 g Caster Sugar

1 Egg

1 tsp Baking Powder

2 tbs Orange Juice

1 tsp Vanilla Essence

285 g Plain Flour

METHOD

Mix the Butter, Sugar, Baking Powder, Orange Juice and Vanilla Essence together until light and fluffy.

Gradually stir in the flour until well mixed.

Knead to form a soft dough.

Place in fridge for two to three hours until firm enough to roll out.

Roll out dough (5mm thick) and use Easter shaped cutters to cut out each biscuit.

Place on baking paper on a tray and bake (200c/gas 6/400f) on a middle oven shelf for 6-10 minures or until the edges brown. They can burn very easily so keep an eye on them!

Leave to cool and when ready decorate or eat as they are – which we did!

Florence had great fun rolling the dough and cutting out the shapes which she did rather expertly!

I think we may have rolled our dough a little thick as our shapes spread just a little bit but we were still please with our efforts and they tasted yummy!
