Mushroom Souvlaki Under 500 Calories!
I am as of this morning 1stone and 1lb down from my starting point 5 weeks ago proving my Monday to Friday diet is working wonders. I eat 500 calories per week day mostly taken up in my evening meal and people keep asking me, with aghast looks, what on earth I’m eating on such few calories. This is why I’m sharing some of my best #Under500cals recipes because you’d be surprised at quite how much food you can have! It’s about choosing the right ingredients, cooking from scratch and often choosing #PlantBased food. I have days when I just have tomatoes on toast but also days when I want something yunmy as well as healthy, filling and still being under 500 cals!
Today I want to share this recipe which is a #Vegetarian version of the #GreekDish #Souvlaki and it’s YUM even if I do say so myself!
You will need a flat bread (@AldiUK ones are 111 cals per bread), a tablespoon of tzatziki dip (this is shop bought but home made is easy and much nicer), some salady bits, a red onion with a red pepper cut and skewered before being seasoned and wedges cut of one medium sized sweet potato – the wedges and pepper and onion skewers need to be seasoned and sprayed with low cal oil and baked in the oven for half an hour on 180.
And for the mushrooms – INGREDIENTS: A handful of mushrooms (any – these are a combination of chestnut and button), paprika, mixed herbs, dried mint, 2 cloves of garlic (grated), olive oil, one lemon (juiced) and salt and pepper.
METHOD: Mix a teaspoon of the mint, a teaspoon of the paprika and a teaspoon of the mixed herbs with the lemon juice, garlic and a big glug of olive oil. Score the mushrooms on the top and put in a bowl with the marinade coating each one using a spoon. Leave marinating in the fridge for a few hours or over night for the best flavour. When fully packed with the flavours, skewer the mushrooms and bake them in the oven alongside the skewered onion and peppers and the wedges. When cooked assemble the salad and tzatziki with the skewers and serve the sweet potato wedges on the side!
