We took part in the #Hungry2Happy Challenge last week when we made our Flower Kebabbles On A Pesto Pasta Meadow recipe. The challenge is set by Britmums using Richmond Mini Meatballs in new, exciting and fun recipes! We had lots of fun and the meal was such a success I thought I’d do another one and enter the challenge again!
The Richmond meatballs have a 52% meat content which goes against the conception I had of them and my children really liked them the first time they tried them. They’re quite fussy really so I’m pleased to have found something they like which I can add to the list of meals they will eat! They are mixed with ingredients I am happy to feed my children and as far as I can see are very friendly for little ones!
For our second recipe, and because we’re quite into numbers, clocks and telling the time right now I decided to use the meat balls to make a food clock and with a play on our blog name here is my second recipe for the challenge!
Rock ‘n’ Roller Around The Dinner Clock Tonight
Ingredients:
Richmond Mini Meatballs (one frozen pack has around eight servings)
1 red pepper
Frozen mixed vegetables
A small cup of rice for each portion
For the quick home made tomato sauce:
A tin of tomatoes
A teaspoon of tomato puree
A slug of balsamic vinegar
Cut the pepper as best you can into the numbers of a clock. They do not have to be perfect!
Cook the meat balls as per instructions (10 minutes in the over or 1 minute in the microwave) and boil the rice and vegetables.
Whizz the tomato sauce ingredients in a blender and heat in a sauce pan. This is enough for four portions and can be frozen.
Once everything is cooked arrange on a plate with the rice as a base and using 6 meat balls (which are cut in half) placed around the circle of the plate – a half a meat ball for each number position.
Use green beans and carrot batons for the clock hands and make it say any time you like. Decorate with the raw pepper numbers and sprinkle around the rest of the vegetables in an attractive way.
Pour sauce around the outside of the clock as the frame.
Florence thought this was ace! We talked about what time the clock showed and counted all the numbers before she ate! A certain little brother (who just had his in a bowl and not made into a clock) was a bit put out and tried to eat his sisters!
I thought novelty food only became exciting when a bit older like Florence but I won’t make the mistake of thinking Jimmy doesn’t mind again! He quite clearly did!
It sounds fiddly but preparation took me 5 minutes and overall cooking time was 25 minutes.
