Spicey Falafel Flat Bread Wraps Under 500 Calories!

**** SPICEY FALAFEL FLAT BREAD WRAPS UNDER 500 CALORIES ****

I’m struggling to get all the ingredients for the regular food I make on my Monday to Friday low cal diet so I made these spicey falafel wraps with salad, raita & flat bread using things from my cupboard & left over bits & bobs in the fridge. Without meaning to blow my own trumpet it was absolutely delish. Easy, cheap & low in calories makes it a triple winner for me!

SPICEY FALAFEL INGREDIENTS: 400G tin of drained chick peas, one medium carrot peeled & grated, one red onion peeled & grated, 2 garlic cloves peeled & grated, 1tsp cumin, 1tsp mild curry powder, 1tsp tumeric, a handful of chopped fresh coriander, extra virgin olive oil, one tbsp plain flour & salt & pepper to season. .

METHOD: Fry the carrot, onion & garlic in a little oil until soft then place in a bowl with the chick peas, spices & coriander before blending with a hand blender. Mould into 12 small patties before dipping each one on each side into seasoned flour. Fry on each side for 3 mins & keep warm in oven while you make the rest. .

FLAT BREAD INGREDIENTS: 200g plain flour (Or you can switch in Organic Tapioca Starch instead for a gluten free alternative) , half a tsp salt, 100ml of warm water & 2 tbsp olextra virgin olive oil. .

METHOD: Mix the flour, salt & water with your hands until combined then add the oil & knead for 5 mins until the dough no longer feels oily. Divide into four & roll flat to the size of a side plate before dry frying on each side for 2 minutes (you will see them bubbling when they are ready to turn over). Wrap in tinfoil until needed. .

RAITA INGREDIENTS: 4 tbsp plain yogurt, 1 tsp coriander seeds, 1 tsp mustard seeds, a few fresh mint leaves, extra virgin olive oil & half a lemon. .

METHOD: Dry fry the seeds until they pop then use a pestle & mortar to grind them to a powder. Add the yogurt, fresh mint leaves & lemon juice & use a hand blender to combine. Drizzle the raita with oil before serving.

TO SERVE (4): Spread the raita & any salad you have (I used leaves, baby plum tomatoes, cucumber & spring onion) over the flat breads, top with falafel (3 per wrap) & wrap before tucking in!
