Creamy Moules Marinière with Crusty Bread!

What could be better than a steaming bowl of mussels swimming in a fragrant white wine, garlic and cream sauce. This classic French-inspired Moules Marinière is elevated with sweet red onion, a touch of chilli for warmth, and plenty of fresh parsley. Serve with crusty bread to soak up every last drop of the delicious sauce.
Serves:
4 as a starter or 2 as a main course
Ingredients:
1kg fresh mussels, cleaned and debearded
1 tbsp olive oil
1 red onion, finely diced
3 garlic cloves, finely chopped
1 red chilli, deseeded and finely sliced
150ml dry white wine
150ml double cream
2 tbsp fresh flat-leaf parsley, chopped
Salt and freshly ground black pepper, to taste
1 large crusty baguette or artisan loaf, sliced
Method:
- Prepare the base
Heat the olive oil in a large deep pan or casserole dish over a medium heat. Add the red onion and cook gently for 4 to 5 minutes until softened. Stir in the garlic and chilli and cook for a further minute until fragrant.
- Add the wine
Pour in the white wine and bring to a gentle simmer. Allow it to bubble for 2 to 3 minutes to reduce slightly and cook off the alcohol.
- Cook the mussels
Add the cleaned mussels to the pan and cover with a lid. Cook for 4 to 5 minutes, shaking the pan occasionally, until the mussels have opened.
- Finish the sauce
Reduce the heat and stir in the cream and most of the parsley. Season lightly with black pepper and a small pinch of salt if required. Simmer gently for 1 minute. Discard any mussels that have remained closed.
- Serve
Ladle the mussels and creamy sauce into warmed bowls. Scatter over the remaining parsley and serve immediately with plenty of crusty bread for dipping into the rich, flavourful sauce.

Top Tips:
Use a dry white wine such as Sauvignon Blanc, Pinot Grigio or Chardonnay.
Fresh mussels should smell clean and slightly salty, like the sea.
For a richer version, add a small knob of butter along with the cream.
Serve with skinny fries for a traditional Belgian-style meal.
