Halloween Pumpkin Iced Biscuits!
I bought my cutter a while ago and it has lots of elements to make different faces. I can’t find it anywhere now but there are lots of brilliant cutters about so as long as you buy one with cut out eyes and mouth so show the chocolate through then it’ll be grand. These are two biscuits sandwiched with chocolate (in this case Galaxy) and then the fronts I have flood iced which is fiddly but quite easy as long as you have a good piping bottle.
Ingredients (this will make the front and backs for 5 cookies – my cutters are big):
Biscuits – 200g salted butter, 200g caster sugar, 1 egg, 400g plain flour and 2tsp vanilla essence.
Icing – 200g icing sugar, juice of half a lemon, one egg white.
Method:
Cream the butter, sugar and vanilla esence until well mixed but don not over work. Beat the egg and add it slowly in with quarter of the flour at a time. When combined roll into a ball and chill in the fridge for half an hour. Roll out, cut your shapes and put them on a flat surface back in the fridge to chill for another half an hour before baking in a preheated over (180/160) for 15 minutes or until golden around the edges. Leave to cool.
To make the icing mix the ingredients into a paste and colour with whichever food colouring you are using before pouring into a piping bag to decorate.
Top Tip: When icing pipe your outline first and leave that to dry before filling in. Fill in in close lines and then push the icing into any gaps with a cocktail stick. Leave to dry.
