A friend of mine has told me about a pizza roll thing her husband makes with home made pizza dough and pesto and I keep meaning to get the recipe from her as it sounds delicious. I made some pizza dough the other day and decided to just give it a go with a bit of a wing and see what happened and the results were pretty good even if I do say so myself!
I make pizza dough loads (bread machines are both good and bad because on the one had you don’t have to faff around kneading dough yourself but on the other you end up eating a lot of bread and pizza – oh well) and it was good to make something a little diferent as I have got used to making the same ones over and over again.
My friend had mentioned pesto and rolling the pizza up so this is what I did!
Pretty easy so far so I decided to pop it in the oven for about the same time I would cook a regular pizza and see what happens. This is the result!
I’m not sure I’d make it over a normal pizza but it was very nice and good to have a bit of a change. There’s always so much dough from a batch that trying to do some other little bits with it is ever a bad thing. If there’s any left over I often like to roll some out from dough ball sized pieces and make mini pizzas for the lunch boxes during the week. I’m going to make some mini pizzas like this for Florence’s birthday party too I think!
They look yummy and are a great idea for parties. My teen is having a pre Christmas party so I think I’ll add them to the food list, less time consuming than pizzas.
