Chicken And Vegetable Soup under 500 Calories!
There’s nothing as heartwarmingly filling on a cold and windy evening than a bowl of home made chicken and vegetable soup. Bonus is that it contains very few calories meaning it can be enjoyed with 2 slices of seedy bread and REAL SALTED BUTTER (if I couldn’t have proper salted butter I just wouldn’t bother)!
There’s no real method to my soup other than I make stock by boiling up a chicken carcass (every time we have roast chicken) with a stock cube and/or the left over gravy. I use it with any veggies I have, often old ones which are past their best. This batch had half a head of broccoli, 2 medium carrots, 2 medium potatoes, a large brown onion and 3 garlic cloves with some of the left over chicken and when it’s cooked I season then blitz it using the blender on the soup maker. A soup maker is a fab gadget, we use it ALL the time and even though cooking soup on the stove isn’t hard it really does make the job halved.
I had a bowl of this soup with bread this evening and I feel SUPER full and happy. The westher today has commanded such a supper – hasn’t it been COLD! I am 3 and a half weeks into my diet now and the scales show me with a 12lb loss this morning so I’m right on schedule. I think making sure my evening meal is tasty AND filling is the key!
