I’ve been waiting for a really long time to get some sunshine drinks (what with being pregnant all last summer) so don’t let the current weather make you think I’m going to wait any longer! The spring equinox has been and gone so with or without any actual sunshine poking through the clouds (and let’s face it, it has occasionally showed its face) the spring for my drinking cabinet has well and truly sprung!
This month I’ve been taste testing The One gin (£40.95) from 31Dover (who incidentally have free delivery on orders over £31 at the moment) which is an ethical brand of gin who help to fund water projects around the globe. After funing life changing projects for over 12 years with their water and soft drinks One decided to create a premium quality gin to further their amazing work – and for us drinkers of their produce I say why have water when you can have gin?! One’s vision is to raise £20 million for clean water projects by 2020 all from their One Gin. So for every bottle you buy, you’ll be helping some of the poorest communities around the world gain access to clean, drinking water.

One Gin is distilled by multi-award-winning Master Distiller Sarah Thompson at Blackdown Distillery in Sussex. The process uses 9 botanicals from around the world, plus one quintessentially British botanical – sage – foraged from the grounds of the distillery. With the use of an alembic copper still, the small, handcrafted batches of One Gin are filtered seven times for an amazingly smooth finish. The combination of the sage and juniper provide savoury notes of black tea and consequently, a very unique British gin.
Now I’m fond of gin (you may have gathered from my many cocktail recipes) and this one is so crisp and perfect for a spring cocktail I had to make it light, refreshing and give it a hint of sweet and sour to compliment the sage. So… Here goes, ethical gin with a yummy sunny vibe for you – well, they do say there’s no such thing as a selfless good deed so you may as well enjoy it while you know your purchase will also help others. Ingredients:
The One Gin, caster sugar, fresh mint leaves, fresh limes, cucumber, ice and a premium tonic water
Method:
According to taste and making this sweeter or more sour depending on your preference, add mint leaves (around 10), a squeeze of lime juice (I like about half a lime), the sugar (I use a level teaspoon), a few slices of cucumber and a good double measure of the gin to a cocktail shaker before muddling. Pour over a large long stemmed gin glass decorated with a thin slice of cucumber running around the outside edge and top with the tonic water and a thin round slice of lime. Enjoy!
