I have children who like novelty food…Who doesn’t? But the thing is, fish shaped fish nuggets or curly whirly chips and the like are just not altogether healthy! Quick, yes. Good and nutritious, hmmm, definitely not!
I am trying to stop using convenience food and make my own healthier alternatives but it has to be said this does take more time! I am therefore, trying to create some novelty, quick and easy convenient but non convenience food instead!
Last night was fish cake pops with corn on the cob. The whole thing took 20 minutes and the children loved it!
So… I used, three medium and peeled potatoes which I boiled. When cooked I mashed them with a tin of salmon including some of the water from the tin. To this mixture I added a touch of sweet chili dipping sauce but you could leave that out of course. Next I coated them in flour and fried in a smidge of oil on each side before placing a cake pop stick in each one. I also microwaved in water some fresh corn on the cob with a knob of butter to serve and voila! Quick, easy, convenient and all it took was a stick to make it novel! Adding different herbs, spices or fresh ginger or lemongrass could be an alternative to the sweet chili and any tinned fish could work!

Oh! And one more thing is that it’s cheap as chips, makes loads and I’ve at least three more portions which I’ve frozen! This is a great baby led weaning recipe but mine are well past that stage now and still enjoy it!
