I think the slogan is ‘Lidl Surprises’ and I have to say that when shopping in Lidl today, I was actually very surprised. I got some absolute beautied for the week including 30 day matured rump steak (under a fiver), mini cucumbers to munch on (£1.29) and some fresh cakes and bread from the insotre bakery at an absolute snip. I also bought myself some seasonal squash to make hearty Halloween soup with and not only do they look beautiful (good enough to display around the home for a festive decoration) but they make pretty fine soup to boot and at 99p per kilo I got three for under £3!
So I thought I’d share my Halloween Squash soup recipe with you as this is the season to indulge in a bowl of the warming home made stuff and with a drizzle of cream on the top it’s the perfect antidote to a cold and rainy day like today.
Ingredients: 50g butter, 2 white onions, chopped, 3 stalks of celery (sliced), 3 carrot (chopped), 4 medium potatoes (peeled and cut into cubes), 3 medium butternut squashes (peeled, seeded and cut into cubes, 1ltr of chicken stock, olive oil and salt and freshly ground black pepper to season as well as full fat cream to drizzle.
Method: Roast the squash in the oven with the onions and some olive oil for 1 hour on a medium heat. Melt the butter in a large pan and fry the carrots with the celery, potatoes and cooked onions and squash until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to the boil. Reduce heat to low, cover pot and simmer 40 minutes, or until all vegetables are tender. Using a hand held blender blitz it all together and season to taste. Voila!
I was very impressed with Lidl and will definitely be back for more. I attended their Christmas press show earlier in the year so I know very good things are coming for December but I also LOVED the Halloween stuff which is in store right now. I picked up some spooky pumpkin, bat and spider shaped tricolour pasta which I thought was rather fun and came in at under £1.50 for a massive packet! The kids are gonna love it!
