Healthy Nutty Ice Cream Bars – Recipe!

How to make home made Snickers ice creams in a much healthier way using Organic Wholefoods with only 5 ingredients. Tastes like a Snickers but is better for you!

  1. Dates
  2. Greek yogurt
  3. Organic nut butters
  4. Good quality dark chocolate
  5. A scattering of salt crystals

This might be one of the most delicious things ever. Still a treat, but a lot better for you than anything with refined sugars and much more filling and satisfying too!

Add boiling water to just cover a packet of dates (not medjool, just the smaller, cheaper ones) in the cup for a Nutribullet and blend.

Add three tablespoons of nut butter and blend again (add more water if too thick, you need it to be like a yogurt consistency).

Take half of the mixture out and set aside. Fill the cup with the same volume you just removed of mixture, with Greek yogurt and blend one more time.

Pour the mixture into an ice bar tray (I got mine for £3.99 from The Range) and in each compartment leave a little gap at the top. Pop it in the freezer until solid (about 4 hours).

(You should have left over yogurt mix to save for a second batch.)

Remove the trays lid once frozen and in each compartment spread a layer of the leftover date and nut butter mixture (again you will have enough left for a second batch). You won’t need to put the lid back on at this stage, and it goes back in the freezer for a couple of hours now just to make that layer solid.

Melt dark chocolate and spread over the entire top, adding a sprinkling of salt crystals at the end then back in the freezer to set overnight before turning out (if any are stuck together they’re easy to break apart or use a heated knife for a smooth cut) and placing in a freezer bag until you want to eat them. Then you can make that second batch because you will 100% want more once this lot has gone!
