Turkish/Indian Fusion Chicken Kebabs under 500 Calories!
The other day I made Jamie Oliver’s naan bread for a curry & it was so delish I had to make it again – Google his recipe, it’s AWESOME and you can switch up the flours for a healthier version, try using chickpea flour which is especially good in Indian cookery! For an under 500 calorie meal I served it with chicken kebabs which I’ve given a Turkish/Indian fusion, raita (different to the one I made for falafels the other day) & a prepared Indian salad as well as some leaves. Very filling & very yum! You only need to eat ONE naan bread to stay under the 500 calories but you will want to eat more!
KEBAB INGREDIENTS PER PERSON: 1 medium chicken breast cut into bite sized pieces, 1 tbsp plain low fat yogurt, half tsp each of curry powder, cinnamon, cumin, turmeric & chilli flakes, a drizzle of olive oil, one lemon (zested and juiced), 1 tsp of garlic puree & sea salt.
KEBAB METHOD: Mix the yogurt with all the ingredients & add the chicken. Coat thoroughly then place in the fridge for at least 5 hours. Skewer with some red onion & either grill or bake in the oven turning frequently.
SERVE WITH RAITA AND SALAD ON JAMIE OLIVER’S NAAN BREADS!
RAITA INGREDIENTS PER PERSON: 1 tbsp low fat plain yogurt, juice from a wedge of lemon, half tsp each of mustard seeds, coriander seeds & cumin seeds, a drizzle of olive oil, a pinch of salt, one tsp of garlic puree, a small handful of fresh coriander (finely chopped) & a few fresh mint leaves (finely chopped).
RAITA METHOD: Toast the seeds in a dry pan for a few minutes before griding them in a pestle & mortar to a powder. Add them to the yogurt with all the other ingredients & mix well.
SALAD INGREDIENTS PER PERSON: 5 Baby tomatoes chopped, half a red onion finely chopped, a handful of fresh coriander chopped, a glug of olive oil, juice of half a lemon, half a tsp each if garam masala & ground cumin. (Extra salad leaves if you fancy).
SALAD METHOD: mix everything together & leave marinating for a few hours before serving on the naan bread with the raita, chicken & some extra salad leaves if you fancy them!
